That was about 10 years ago but I still remember how fresh and creamy and refreshingly delicious it was. I’ve been perfecting my own recipe ever since! It’s so simple to make – just leave the oats to soak over night – no cooking required. This is the recipe we use for the wonderful Yogis at our Yoga Retreat Cornwall! Bircher Muesli Recipe with Coconut Milk and Fresh Berries
SERVES 2
This Bircher Muesli recipe with coconut milk is vegan and dairy free whilst tasting decadently creamy. If you’d like it to be gluten free too just ensure you use gluten free oats. The apple juice and banana make it naturally sweet but if you have a big sweet tooth add maple syrup to taste. We love topping this with a jewel-like assortment of fresh berries but you can add any fruit.
INGREDIENTS
100g oats
100ml apple juice
150ml coconut milk
1 apple, finely chopped
1 banana, mashed
2 tbsp raisins
1/2 tsp cinnamon
1/2 tsp vanilla essence
2 tsp maple syrup (optional)
toppings:
lots of mixed berries (we like lots of blueberries, blackberries & strawberries)
2 tbsp seeds
2 tbsp pomegranite seeds
1 tsp dessicated coconut
DIRECTIONS
Combine the oats, apple juice and almond milk in a bowl, cover with cling film and place in the fridge overnight to soak. The next morning, stir in the apple, banana, raisins, cinnamon, vanilla and maple syrup (if using). Top with your berries, seeds and coconut.
