Healthy Vegan Recipe Inspiration

This weekend I cooked for everyone on our Shine Yoga One Day Yoga Retreat in Newquay, Cornwall. I was inspired by two amazing recipes that I discovered from two of my favourite cooks (Sarah Britton of My New Roots and Anna Jones). The recipes are both vegan, refined sugar free and can be easily adapted to be gluten free too. Most importantly they look and taste incredible as well as being so nourishing and healthy. The food was so popular and so many people on the one day retreat asked for the recipes I wanted to share them with all of you so, even if you couldn’t make it to our one day yoga retreat in Cornwall, you can still try these beautiful dishes at home.

Winter Rainbow Panzanella by My New Roots

This is such a hearty and filling salad with so many different flavours, colours and textures. It takes a while to put together all the different constituents but the end result is so worth it. The yogis on our One Day Retreat particularly loved the fresh and spicy quick pickled ginger carrots.

Gingerbread and cranberry tart (accidentally vegan) by Anna Jones

This ‘Christmassy’ tart is too good to only eat once a year. I used blueberries instead of cranberries which are hard to get now we’re in January. I also substituted the wholemeal flour for a heaped tablespoon of coconut flour and an extra handful of pecans to make this gluten free. It still turned out perfectly and was so delicious.
