It’s almost embarrassingly easy to make this summer berry breakfast bowl. It isn’t a recipe so much as the assembling of amazingness! I actually wondered if it was worth writing a blog post about..but then I realised…it’s the simplest healthy dishes, the ones we can throw together in minutes and don’t really need a recipe for, that are some of the most important to know! It’s these dishes that keep us healthy and nourished when we are short on time or low on energy. We all need more of these super simple, incredibly healthy meals in our repertoire.
I eat this summer berry breakfast bowl all the time (not just for breakfast!). I love how beautiful it looks, how sweet it tastes and how utterly nutritious it is with all the vibrant berries, creamy coconut yoghurt and the crunch of raw muesli. It’s also vegan, gluten free and refined sugar free. I even serve a version of this as part of the brunch on the Shine Cornwall yoga retreats, and its been really popular with the wonderful retreat yogis.

I recently discovered Primrose’s Kitchen raw muesli while I was hunting for a muesli or granola to top my summer berry breakfast bowl that didn’t contain huge amounts of sugar and had no unnecessary oils. Their raw beetroot and ginger muesli is perfect!

Summer Berry Breakfast Bowl Recipe
Serves 1
INGREDIENTS
- 100g strawberries
- 50g blueberries
- 50g blackberries
- 50g raspberries
- 1/2 tsp vanilla essence
- 120g coconut yoghurt
- 3 tbsp raw muesli (I use Primrose’s Kitchen raw beetroot & ginger muesli)
- 1 tsp date syrup (or maple syrup/honey/sweetner of your choice)

DIRECTIONS
Hull the strawberries and cut in half if they are quite large.
Place a sauce pan on a low heat and add the strawberries, blueberries, blackberries and vanilla essence. Gently heat the berries in the pan for a few minutes, stir softly until they are just warm then very carefully add the raspberries (so they don’t get squashed).
Pour the berries in to a bowl, spoon over the coconut yoghurt and sprinkle with raw muesli.
Finish with a drizzle of your chosen sweetener if you like.

Posted at 07:42h, 11 JulyMy fave healthy breakfast is Paleo porridge – 6 tbsp dessicated coconut, 3 tbsp ground almond, 1 1/2 tbsp ground flax mixed with 3/4 cup of almond milk and 1 tsp vanilla. Mix and heat for 90 secs in the microwave and serve with your favourite toppings ( berries, cinnamon, almond butter etc)

Posted at 16:55h, 11 JulyHey Jen, as described earlier my favorite breakfast at the moment is a handful blueberries and strawberries, pineapple or banana (which ever I have) with vanilla yoghurt, coconut granola and some cereals topped up with almond milk and normal milk (just because I believe in the calcium in normal milk). 😉

My favourite is a handful of fluffy and light Buckwheat pancakes – with a dollop of sheep’s yoghurt, a handful of roasted nuts and coconut flakes, some chia seeds, a banana, a couple of blueberries and finally, but by no means least, maple syrup – have to admit, I ALWAYS go back for seconds 😉 Xx

Posted at 07:31h, 23 JulyFavourite breakfast is 1/4 cup oats, 1-3 teaspoon chia seeds, unsweetened almond milk gently heated to make porridge. Stir through teaspoon of maca powder once cooked through and top with fruit of choice, but I like strawberries & blueberries. Finish with a scattering of pumpkins, sunflower & flaxseeds for a lovely crunch (can gently dry toast these in pan first if time). Also great with cacao instead of maca & banana & can top with roughly chopped nuts. Enjoy
